Why don't you buy her a hair barrett or some other type of hair accessory.

You can tell you that you were out shopping and saw this barrett which you thought would look great in her beautiful long hair. Or tell her that since she has been such a great roommate you wanted to get her a present. You can then offer to put it in for her. You need to keep the focus on her hair without making it to obvious.
